- 150 grams prawn peeled and deveined
- 200 ml. water or stock
- slices galangal
- 80 grams mushroom cut in half
- 1 tomato cut into to 4 pieces
- 5 small chillies crushed
- 1 tbsp. fish sauce
- 1 tbsp. lime juice
- 3 kaffir lime leaves torn into pieces discarding the stem
- 2 spring onion cut into 1”
- a bunch of coriander, long coriander roughly chopped
- 2 clove garlic crushed
- 1 shallot sliced
- ½ onion
- 1 stalk lemongrass broken up and sliced into 3 cm strips
- Put the water in a pan and bring to the boil. Add the garlic, shallots, onion, lemongrass and galangal and bring to boil.
- Add the prawns, mushroom, fish sauce and kaffir lime leaves.
- Bring to the boil or simmer until the prawns are cooked.
- Add the chilli paste, tomato and fresh milk and stir thoroughly.
- Turn of the heat and add the lime juice, chillies and sprinkle with the chopped spring onion, coriander.
